Apple & Camembert Samosas with Beetroot and Onion Marmalade


Ingredients for filling:
Apples, peeled and chopped into small cubes
Camembert cheese
White flour

What to do...

  1. Prepare very thin pastry in the same method as you would make chapattis, then cut into triangles big enough to enfold the filling
  2. Mix apple with lemon juice and camembert cheese to taste
  3. Spoon mixture into the centre of the pastry triangles, then fold two corners inwards and seal with a little flour mixed with water. Top up the mixture inside before sealing the top of the samosa with the third corner of pastry.
  4. Dip-fry and then serve immediately with beetroot and onion marmalade.


MARAMALADE: (makes 4 cups)

1/4 cup olive oil or butter
4 cups white onions, peeled and thinly sliced
4 cups of beetroot, peeled and thinly sliced (500g)
1 1/2 cups of balsamic vinegar
1 tbsp orange zest
2 cups light brown sugar
3 cups water


  1. Place all ingredients together in a saucepan over medium heat and simmer gently until most of the liquid has evaporated.
  2. When it is almost done, stir often so that it doesn't burn.
  3. Remove from heat and allow to cool.
  4. Seal in sterilized jars.
  5. Will last up to 3 months in sealed in jars. Once opened, store in fridge.
